The Taste of Summer All Year Long

The sweet and slightly tangy flavor of this snappy condiment is the perfect accompaniment to almost any dish! The sweet caramelized onions deliver such a welcome contrast to the tangy pop of vinegar that marinates the tomatoes, while offering subtle hints of spicy notes in the sparse flecks of crushed red pepper flakes.

Served hot or cold, this topping goes really well with everything from cheddar potatoes, to smoky barbecue! It's extremely easy to make and difficult to keep around. I strongly urge you to at least double whatever amount you think you'll need, and then double THAT!



Flavor Explosions


Down here we LOVE our native sandwiches called Po'boys. This relish is the perfect accoutrement with a sweet and slightly tangy taste that balances the richness in the smoked sausage on freshly made pillowy soft po'boy buns!

For Flavor Pop, You'll Need:

2 Tbsp olive oil

1 1/2 cups yellow onion, diced

1 tsp salt

1/2 tsp black pepper

1 14-oz. can diced tomatoes, with juice

1 1/2 Tbsp sugar

3 Tbsp red wine vinegar

1/4 - 1/2 tsp crushed red pepper flakes

salt, pepper, sugar to taste


Relishing the Relish


In a medium skillet, heat the olive oil and add in onions. Cook until onions are lightly caramelized and fragrant. Season with salt and pepper and stir.


Pour in tomatoes with juice. Add in sugar, vinegar, and red pepper flakes and mix well. Reduce heat to low and cook until the liquid has gone down by ⅓ to ½. Adjust seasoning with salt, pepper, and sugar if it tastes too vinegary.
